For this simple 6 ingredient recipe you will need aubergines, tahini, olive oil, ,lemon juice, garlic and salt.

First, cook the aubergine over medium flame until its soft and then pierce it with a knife. Usually five minutes for each side.

Leave the aubergine to rest for 25-30 minutes and then carefully remove the charred skin. Then you need mash the aubergine in a bowl or use a hand blender.
Then add the salt, garlic, tahini and lemon juice and mix well, Taste and add seasonings if necessary.

Finally, top the aubergine dip with olive oil, top with parsley (optional) and pomegranates (optional). Voila enjoy with a warm pitta bread.
